Red Velvet with cream cheese inside delizzzzz


So a dear friend from FB Benny Rivera makes amazing amazing cookies, seriously he lives in NY and his bakery's name is City Cakes https://www.facebook.com/CityCakes?pnref=lhc check his cookies, well me being preggors, I couldn't get the cookies to Mexico but I had a huge craving for those red velvet cookies with yes with cream cheese filling, in my head I had no idea how could you make cookies with a filling and cream cheese with out melting, so the trusty Pinterest came to mind, and I found this amazing recipe.
I had to try it, omg omg omg ohhhh so good!!!!

The Cookies
  • 1 box of red velvet cake mix
  • 2 TBSP flour
  • 2 eggs
  • 1/2 C vegetable oil 
  • 1 tsp pure vanilla extract
  The Filling
  • 4 oz cream cheese
  • 1 tsp vanilla extract
  • 2 C powdered sugar
  The Drizzle
  • 2 C white chocolate chips, drizzled
Time to get baking :
  • Mix eggs, oil, and vanilla together. Add cake mix and flour. Mix until smooth. 
  • Cover and refrigerate dough for at least one hour. 
  • Using a stand mixer (or beaters), whisk powdered sugar, cream cheese, and vanilla together until smooth. 
  • Using a spoon and your finger, scoop out 1" balls of filling onto a plate (no need for them to be perfect, just separated)
  • Place plate in fridge for at least two hours (or freezer for one). 
  • Remove dough and filling from fridge or freezer. Take a small ball of dough (1/8 - 1/4 a cup) and roll it into a ball. Flatten the ball using your palms, and place a small ball of filling in the middle. Use your hands to fold the edges of the dough around the filling, completely surrounding it (you now have a ball of doughs around a ball of filling). Place on baking sheet and repeat till all the dough is gone. Bake at 350 for 10 - 13 minutes or until the tops of the cookies crack. ***Once you see them begin to crack, remove them. Even if they don't look done, they are. 
  • Let cookies cool and then drizzle with melted white chocolate. (before I had frosting bags for piping, I just used a knife to drizzle. Its a little messy but works just fine - if the white chocolate isn't working for you, you can drizzle the extra cream cheese frosting on top of the cookies instead)
****If you are going to store the cookies for more than a day, you may want to keep them in the refrigerator (given that they're filled with cream cheese - but to be honest, I never have and they're still good a few days later).

The Queen of cakes is coming to Mexico

Karen Marie Portaleo is coming OMG!!! 
3 years ago after my surgery, I really wasn't making cakes, didn't think I was going to be making cakes, and really didn't want to, but I needed bed rest, so pretty much very little things you can do with bed rest, lest see, you can be in FB, Twitter, IG, blog, make cards, scrapbooking, read a book, be on the computer, social media, invite friends over, shop on the net, and watch tv, apple tv, dvds, blu-rays, ok ok ok actually there are s many things you can now do while being in bed rest, so yeah I had tons of fun. With my apple tv, so many things to do with it, but mostly is watch all the shows they don't have in Mexico (tv here sucks) I started watching Halloween wars since day one I was hooked, not only my favorite holiday, but it was related to cake, yes to cake, and making incredible halloween, eerie, spooky, themes was just the tip of the icing, punt intended.
So who do I see, Karen Marie Portaleo, making incredible cakes, each week new ideas, it was on apple tv so it was each 45 min LOL, I was flabbergasted, not only is she a pretty cool chick, but when she saw Rob Zombie she made  face I would soooo make, then I saw her pieces, outstanding she made Sleeping Beauty into a dead Aurora and I have a thing about dead, and skulls and sleeping beauty in particularly one of my favorite Disney movies, I would act out like I was waiting for my prince while sleeping, I was 5 (but isn't it the best way to find your prince, damn Disney that's another post) so all of this lead me to say that she has a very important place in my heart, and I might get to meet her, i'm truly excited meeting your idol, and someone that has no idea how she truly turned my life around is once in a life time opportunity.

Miss Kaysie Lackey in da houseeeee ok in Mexico actually.

I'm truly happy that I got to chose not one but two of Kaysie Lackey's classes in Mexico City.
Blown away Betty and Galloping Gus, in the morning of my classes I got really sick, so Francisco (the chef) toke me to the hospital I got some injections and I was set to go and take the class, I was mega excited and ready to take on the cakes.
The bad part is I was pretty much drugged and with the Sciatic nerve but it wasn't going to stop me. So ready to take on Blown Away Betty, I was in love with this little girl and her red huge umbrella made of cake and her gorgeous white dress made of cake and her teal trench coat on top of the dress. The class was even more that I had hope for.
I had never seen photos of me working.
It was 3 days of very intense work, seriously we are talking about 9am till we could finish, but she came out truly beautiful.
As you can tell mine looks angry or maybe pissed, pretty much my attitude in the class because of the back pain, but so worth it! Truly in love with this cake and the experience :)
I have been waiting for this class sooo much I can't even believe I got the chance to meet on of my cake idols, my cake crush well at least one of them Miss Kaysie Lackey from The People's Cake in Seattle, I think I learned about her from food network cakes and I so wanted to take her Butler cake I loved him so much, but she was teaching something else in Mexico.
Isn't he amazing???

When there is a sale on powder sugar, it's calling your name

So what did I do, I pretty much bought all the bags there where for sale $15.00 pesos omg are you kidding me, normally it costs $45.00 so of course I needed to buy all the 30 kilos of powder sugar there are so I can make my almond fondant recipe that has been tweaked to work for me over the years. I still don't know if it's a recipe I want to share?
Should I share my recipe? There are so many out there, so I still don't know, we shall see.

This was my cart and don't you judge me I did buy alot of cereal boxes, my frenemies lv kids cereals, but that is another post, or not really.

And after an all nighter here I have all the beautiful colors I made, 30 kilos that is about 60 pounds of Fondant.

Cake pops, cake pops, cake pops everywhere

One of the new mega thrends in the cake business, or at least in Mexico right now has been cake pops, I wanted to get my little hands on trying these, but are they as simple as alot of people make them to be??? I tried various recipes, they where dry for my chef palette, not what I wanted to sell to anyone at all, so I did some changes to the recipe, and they came out amazing, I only have one flavor right now which is triple chocolate cake pop with cream cheese frosting and my secret ingredient. 
I love how they came out, and they where such a huge hit that I got so many orders, each box has 20 cake pops decorated, all of them decorated, x-mas trees, snowmans, snowmans with hats and scarfs, snowman faces, x-mas cupcakes, and tiny gingerbread men.
All of them covered with chocomex chocolate my choice of chocolate here in Mexico, it's actually really smooth so you don't have to add anymore items to the chocolate, and with the super colors they sale I can make pretty much all the colors I want. Welcome to my Blog, this time CAKES

It's been a while since I have been writing on blogs, sadly I left my journaling, scrapbooking, and card making for a new adventure cakes, so goodbye http://berryprincess3.blogspot.mx/.
I did become a chef and got my masters as pastry chef in Maricu an amazing school here in Mexico city, so it's been a long long time since I have started even making my own fondant. But I need to jump to this new project.
So in december I got alot of cake orders, I mean alot, so.many I seriously couldn't even handle them, so I asked Francisco if he could be my right arm.
As you can see, a very simple CUTE cake, but so many bumps, I still need to work on that.
Then some dear friends asked for some bear cakes and why not they are super fast and super cute, also I could try the new fondant recipe I wanted to make for a long long time ago
 
I also made this cute simple blue and red snowman thank you cards, for this huge order of dark brown sugar butter bundt cakes with simple Dirty Vanilla on the top sprinkled to have the look of snow. 
 Bought some really cute big glass plates that had an snowman on the bottom.

This is how it looked at the end with a simple red ribbon, and a huge celofane bags to keep it's freshenes longer, also this recipe is very new and I added something for the cakes to stay fresh longer, if you want to know my secret let me know in the comments below.
